Anurakti’s Beginning

Once upon a time, in the sun-drenched archipelago of Malta, there was a dream. A dream to create vegan cakes so delectable, they'd rival their non-vegan counterparts. We didn't just want to be another café offering cakes in Malta; we wanted to make a mark in the vegan community with exquisite vegan desserts.

Our first challenge? Finding the right balance between flavour and texture without relying on traditional ingredients. Replacing eggs and dairy was the first hurdle. After some joyous successes and a few... shall we say, 'learning experiences', we discovered the magic of ingredients like chia seeds, aquafaba, and coconut milk.

The Journey to Sugar Free Cakes

Next came the sugar-free cakes. Cutting out refined sugar while ensuring our cakes still tasted heavenly was no easy task. But after a few late nights, several cups of coffee, and maybe one or two sugar-crashes, we found the secret—natural sweeteners! Dates, maple syrup, and stevia became our new best friends.

We laughed over spilled almond milk, had debates about the ideal level of sweetness, and celebrated each little victory, like the first time a customer’s eyes lit up after tasting one of our creations.

We travelled, researched, and tasted (oh, how we tasted!). From the traditional vegan desserts of the East to the innovative concoctions of the West, we drew inspiration from everywhere. And slowly, with love and persistence, our menu started taking shape.
